Kabsaa

By: Hanan Alqahtani

Today I will talk about Kabsa as a kind of favorite food in my country, Saudi Arabia, and other Arabic countries. Kabsa is a popular and traditional meal for a lot of Arabic societies. Moreover, it is considered a main dish on the lunch table almost every three day. Also, it is the main dish in parties and holidays. Every one likes it so much. On the other hand, it caught on in other foreign countries.

It has many healthy benefits. It is made of rice cooked with red or white meat, fish, or chicken in a pot. To prepare kabsa cut the onion and garlic than put it in the pot; stir it with a little vegetable oil until it begins to brown. Then, add the meat pieces or chicken pieces; fry it until it begins to brown, add tomato, majee, spices, salt, pepper, black lemon and water. Then, cover the pot, and cook it over medium heat about 45-60 minutes. You can add something else for tasting if you want like potatoes, carrots or green peppers. After that, remove the chicken or the meat from the pot and put it in a plate in the oven to make it brown and crispy from outside. Clean the rice than put it in the same pot that the meat cooked in, and add water and salt if you want and cover it for 10 to 15 minutes in law temperature. Then put it in one big dish with the chicken in the top to gather with your family around to share the meal. Serve it hot. I prefer kabsa with salad yogurt or vegetables, hot and spicy, and with a cold soda. Hummmmmmmmmm. I hope you all try it one day. You will not forget it. It is so so so delicious.
